Beef Kaldereta

Filipino-Style Comfort Food at Its Best

Ingredients
  

  • 2 lbs beef cut into cubes
  • 3 cloves garlic minced
  • 1 onion chopped
  • 2 cups beef broth
  • 1 cup tomato sauce or fresh tomatoes/canned if preferred
  • ½ cup liver spread or pureed fresh liver
  • 2 cups potatoes sliced
  • 2 cups carrots sliced
  • 1 red and 1 green bell pepper sliced
  • cup green olives
  • 1 tsp chili flakes optional
  • 3 bay leaves
  • Salt and pepper to taste
  • ¼ cup cooking oil

Method
 

  1. Sauté Time! In a large pot or pressure cooker, heat oil and sauté onion and garlic until fragrant.
  2. Brown the Beef. Add the beef and cook for 5 minutes, or until it starts to brown.
  3. Spice it Up. Toss in your bay leaves and chili flakes. Stir in the liver spread.
  4. Add the Sauce. Pour in the tomato sauce and beef broth. Let it cook until the beef becomes tender—about 1.5 hours in a regular pot, or 30 minutes in a pressure cooker.
  5. Veggie Boost. Add the potatoes and carrots. Cook for 10 minutes.
  6. Final Touches. Toss in the bell peppers and olives. Simmer for another 5 minutes.
  7. Season to Taste. Add salt and pepper, and you’re done!
