Chicken and Ham Sopas

Ingredients
  

  • ½ lb ground chicken
  • ½ lb chopped ham
  • 12 oz evaporated milk
  • ½ lb wide egg noodles or elbow macaroni
  • ¼ cup butter
  • 1 medium onion diced
  • 2 cups celery ribs chopped
  • 1 large potato diced
  • 2 medium carrots diced
  • 4 cups chicken broth
  • 3 cups water
  • ½ tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Heat butter in a deep pot. Sauté onions for 2 minutes.
  2. Add celery. Stir and cook for 1 minute.
  3. Add ground chicken and ham. Sauté for 3 minutes.
  4. Pour in chicken broth and water. Simmer for 30 minutes.
  5. Add carrots and potatoes. Cook for 5 minutes.
  6. Pour in evaporated milk. Simmer for 10 minutes.
  7. Add noodles and thyme. Cook 12–15 minutes.
  8. Season with salt and pepper. Serve hot.
