Chicken Menudo Recipe

Ingredients
  

  • 2 lbs chicken thigh or breast cut into cubes
  • 1/4 lb chicken liver cleaned and sliced
  • 1 cup potatoes diced
  • 1 carrot cubed
  • 4 pieces beef or chicken hotdogs sliced diagonally
  • 1/2 cup soy sauce
  • Juice of 1/2 lemon or calamansi
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3/4 cup tomato sauce
  • 1 cup water or chicken broth
  • 2 to 3 pieces dried bay leaves
  • 1 tsp sugar
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Method
 

Marinate the Chicken
  1. In a bowl, combine the chicken, soy sauce, and lemon juice. Mix well and marinate for at least 1 hour. For best results, cover and refrigerate.
Sauté the Aromatics
  1. Heat oil in a pan over medium heat. Sauté garlic and onion until softened and fragrant.
Add the Chicken
  1. Add the marinated chicken (reserve the marinade) and cook until it turns light brown.
Add Sauce and Simmer
  1. Pour in tomato sauce, reserved marinade, and water. Add bay leaves. Bring to a boil, then simmer for 30–40 minutes until the chicken becomes tender.
Add Liver and Hotdogs
  1. Stir in the chicken liver and hotdogs. Cook for another 5–7 minutes, or until the liver is cooked.
Add Veggies
  1. Add potatoes, carrots, and sugar. Season with salt and pepper. Simmer for another 10–12 minutes or until vegetables are tender but not mushy.
Serve and Enjoy
