Ingredients
  

  • 1 can 12 oz corned beef – Use your favorite brand; Filipino corned beef has a great flavor.
  • 1 medium onion – Sliced thin to add sweetness and balance.
  • 3 cloves garlic – Crushed; for that must-have sinangag taste.
  • 3 cups garlic fried rice – Best with day-old rice so it fries up nicely.
  • 3 eggs – Fried sunny side up or however you like them.
  • 4 tbsp cooking oil – For sautéing and frying.
  • ½ cup beef broth – Optional but makes the beef moist and extra tasty.
  • Salt and pepper – To taste.

Method
 

  1. Fry the Eggs – Heat a bit of oil in your pan and cook the eggs sunny-side-up. Set aside once the edges are crispy but the yolk is still soft.
  2. Sauté Garlic and Onion – In the same pan, add crushed garlic and cook until golden. Toss in the onion and let it soften until translucent.
  3. Cook the Corned Beef – Add the canned corned beef and stir. Let it cook for a couple of minutes to soak up the garlic-onion flavor.
  4. Simmer with Broth – Pour in the beef broth and simmer for 2–3 minutes. This gives your corned beef a juicy texture. Season with a pinch of salt and pepper.
  5. Assemble Your Plate – Scoop some garlic fried rice, place the fried egg on top, and add a generous serving of your corned beef. That’s one hearty meal ready to enjoy!
